Ingredients

  • 2 large eggs
  • 1 1/4 cups milk
  • 1/3 of a cup of vegetable oil
  • 1 tablespoon honey
  • 3 tablespoons of butter
  • 1/2 of a cup of cornmeal
  • 1 1/2 cups of all-purpose flour
  • 2/3 of a cup of sugar
  • 1 tablespoon of baking powder
  • 1/2 of a teaspoon of salt

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Spray an 8" square baking pan or similar size cast iron skillet with non-stick cooking spray.
  3. Melt butter in microwave.
  4. Crack eggs into a bowl.
  5. Beat eggs lightly.
  6. Add other wet ingredients (milk, honey, oil, butter).
  7. Stir until well combined.
  8. Add remaining ingredients.
  9. Stir until well-combined.
  10. Pour batter into prepared baking dish or pan.
  11. Bake for 25 minutes (or until toothpick inserted in center comes out clean).

Savory Buttermilk Cornbread

  • 1 cup of buttermilk
  • 1/2 a cup of whole or 2% milk
  • 1 large egg
  • 1/4 of a cup of vegetable oil
  • 1 cup of cornmeal
  • 1/2 of a cup of all-purpose flour
  • 1 teaspoon of salt
  • 1 tablespoon of baking powder
  • 1/2 of a teaspoon of baking soda
  • 2 tablespoons of butter

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Crack egg into a bowl.
  3. Lightly beat egg.
  4. Add buttermilk and milk.
  5. Stir until well-combined.
  6. Add all other ingredients except butter.
  7. Melt butter.
  8. Pour melted butter into 8" square baking pan or similar size cast iron skillet.
  9. Pour batter into baking pan or skillet.
  10. Bake for 25 minutes (or until toothpick inserted in center comes out clean).

Cornbread with Creamed Corn

Southern Meal with Cornbread

Ingredients

  • 3 tablespoons of butter
  • 3 large eggs
  • 1 cup of buttermilk
  • 1 15-ounce can of cream-style corn
  • 2 cups of cornmeal
  • 1 cup of all-purpose flour
  • 3 teaspoons of baking powder
  • 1/2 of a teaspoon of baking soda
  • 1 teaspoon of salt

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Spray an 8" square baking pan or similar size cast iron skillet with non-stick cooking spray.
  3. Melt butter.
  4. Crack eggs into a bowl.
  5. Lightly beat eggs.
  6. Add buttermilk, creamed corn, and butter.
  7. Stir until well combined.
  8. Add remaining ingredients.
  9. Stir until well-combined.
  10. Pour batter into baking pan skillet.
  11. Bake for 25 minutes (or until toothpick inserted in center comes out clean).

Note: If you prefer sweet cornbread, you can add 1 tablespoon of sugar to the batter at the same time you stir in the other dry ingredients.
