How to Make Chicken Chili Recipe
This slow cooker recipe is super quick and easy. Set it in the morning and come home to its rich, spicy aroma and comforting goodness. The recipe is for 6 servings.
Ingredients
- 1 pound of cooked chicken, cut into bite-sized pieces (or shredded)
- 1 (14-ounce) can chicken broth
- 1 medium onion, diced
- 2 (15-ounce) cans of white beans, rinsed and drained
- 2 (4-ounce) cans of diced green chilies
- 1 (11-ounce) can of corn, drained
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon oregano
- ¼ teaspoon pepper
- 1 tablespoon olive oil
- ½ cup whipping cream
Instructions
- Combine all ingredients except the whipping cream in a slow cooker.
- Stir to combine evenly, then cover.
- Cook the chicken mixture on low for 8 hours or on high for 4.
- Stir in the whipping cream before serving.
If you prefer more depth and creaminess in your chili, add 1 cup of sour cream. You can skip it if you would rather have a lighter, thinner chili.
Optional Garnishes
We love adding toppings to our chicken chili. Set up a toppings bar for your guests or family, or go the extra mile by preparing bread bowls. Here are some of our suggestions.
- Sour cream
- Shredded cheddar cheese
- Parsley
- Chives
- Bacon bits
- Green onions
- Corn chips
- Diced tomatoes
- Pico di gallo
- Chopped avocado
- Olives
- Cowboy caviar
- Chopped cilantro
- Lime wedges
For bread bowls, use sourdough bread. Cut a circle in your sourdough bread and scoop the filling out. Fill the bowl with warm chili and top with your favorite toppings. Cut leftover bread into small cubes and toast them to use as croutons.
Storage
If you have leftover chili, store it in an airtight container. Refrigerate for 3-4 days or chill in the freezer for 2-3 months. When reheating the chili, let it thaw before heating it up.
