Vegetarian Chili

Ingredients

  • 1 white onion
  • 1 red bell pepper, seeds and membrane removed
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1 can black beans
  • 1 can kidney beans
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 teaspoon ground cumin
  • 2 teaspoons ancho chili powder

Directions

  1. Cut the pepper into small pieces.
  2. Dice the onion.
  3. Saute the onion, garlic and bell pepper in olive oil until tender.
  4. Add the ground cumin and ancho chili powder.
  5. Add the canned tomatoes and tomato sauce.
  6. Drain and rinse the beans.
  7. Add the beans to the mixture.
  8. Salt to taste.
  9. Simmer on low heat for half an hour.

This dish is excellent served with cornbread. Serves four to six people.

Quick Vegetarian Chili

Ingredients

  • 1 can red kidney beans
  • 1 can pinto beans
  • 2 cans stewed tomatoes
  • 1 jar of your favorite salsa
  • 1 packet chili powder
  • Pinch of red pepper flakes (optional)
  • Pinch of cayenne pepper (optional)
  • Salt and pepper (optional)

Directions

  1. Rinse and drain the kidney and pinto beans.
  2. Place all of the ingredients into a medium size pot.
  3. Stir the ingredients together.
  4. Heat on medium heat until chili is hot, approximately 10 minutes.
  5. Reduce heat and simmer for approximately 20 minutes.

Crockpot Three Bean Vegetarian Chili

Ingredients

  • 1 can black beans
  • 1 can red kidney beans
  • 1 can garbanzo beans (chickpeas)
  • 1 can black bean soup
  • 1 can chopped tomatoes in puree
  • 1 onion, diced
  • 1 stalk celery, chopped
  • 1 clove garlic, diced
  • 1 tablespoon chili powder (more or less to taste)

Directions

  1. Rinse and drain the black beans, red kidney beans and garbanzo beans.
  2. Place all ingredients into the crockpot.
  3. Stir to mix ingredients.
  4. Cover crockpot and cook on low setting for six to eight hours.
