Pressure Cooker Chili Recipe

Making chili in a pressure cooker is a fast way to make a delicious and healthy homemade meal for your family. Ingredients

  • 1 pound ground beef or beef cubes
  • 2 teaspoons olive oil

  • 2 cloves garlic, minced
  • 2 (14.5 ounce) cans dark red kidney beans, drained and rinsed
  • 2 (14.5 ounce) cans diced tomatoes with liquid
  • 3 tablespoons tomato paste
  • 1 tablespoon dark brown sugar
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon sea salt
  • 2 cups water
  • Cooking spray

Directions

  1. Lightly spray the bottom of your pressure cooker with cooking spray.
  2. Over medium heat, add the ground beef or beef cubes to the pressure cooker and begin cooking until browned. This should take about 8 to 10 minutes.
  3. Remove the beef and drain from fat. Set aside.
  4. Add olive oil to the pressure cooker and sauté the onion, bell pepper and jalapeño pepper over medium heat for about 4 minutes or until the onion is translucent.
  5. Add the garlic and cook for an additional minute.
  6. Return the ground beef to the pressure cooker and mix in the beans, diced tomatoes, tomato paste, brown sugar and seasonings.
  7. Add the water and mix all ingredients together.
  8. Lock the lid of your pressure cooker and bring it up to pressure.
  9. Reduce the heat and cook for 10 minutes.
  10. Remove the pressure cooker from the heat source and allow the pressure to release.
  11. Once the pressure is fully released, remove the lid and stir the chili.
  12. Serve and enjoy.

To change up the classic chili recipe, you can add variations such as:

  • Black beans instead of kidney beans - or forgo the beans entirely
  • For extra heat, add a dash or two of hot sauce
  • For a leaner chili, substitute ground turkey for the ground beef
