An American classic

It's hard to imagine any family gathering or holiday without chocolate chip cookies. Chocolate chip cookies are insanely popular. In a completely non-scientific and impromptu survey, I asked my entire email list what their three favorite cookies were. Chocolate chip cookies dominated the answers. And yet there were no chocolate chip cookies as we know them until 1930. The legend has it that Mrs. Ruth Wakefield in Whitman, Massachusetts, added some chocolate chunks to a cookie dough believing that they would melt and create chocolate cookies. Instead, she had devised what would become the king of all cookies. She had stumbled upon the first chocolate chip cookie recipe.

Chocolate Chip Cookie Recipe

Chocolate chip cookies are made using the creaming method. But I have found that modifying the method just a bit creates a richer cookie. What I do is I melt the butter before adding it to the sugar. In the fine chocolate chip cookie recipe tradition, I discovered this trick by accident. I put my butter in a metal 9-200 pan and put it on the stove over the pilot light. My intent was to bring the butter to room temperature. The result was melted butter. But rather than waste the butter, I just dumped it into my sugar. The result was a richer cookie.

Here's the recipe I use:

  • 2 cups and 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 sticks butter, melted and cooled
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. Mix the flour, baking soda, and salt using a whisk to make sure it is thoroughly mixed.
  3. Using the paddle attachment of your mixer, mix the sugars together.
  4. Add the butter, then add the egg and yolk.
  5. Next, add the vanilla.
  6. Slowly add the flour mix to the sugar mix by adding 1/4 cup of flour mix at a time and letting it mix in before adding another 1/4 cup.
  7. Stop the mixer and add the chips. Mix them in by hand.
  8. Drop the cookie dough in tablespoon size balls on your cookie sheets. Place a sheet of parchment paper on the cookie sheet.
  9. Bake the cookies for 15 minutes.
