Apple Crisp Recipes

Easier than pie and always welcome at gatherings, apple crisp recipes are a fun treat.

It's the Topping that Makes the Crisp

Apple crisp recipes are similar to apple cobblers and apple pies. Like cobblers and pies, apple crisps consist of a sweetened apple filling and a topping. Unlike apple pie, when you are baking apple crisp recipes you don't have to deal with making a pie crust.

The crisp part of the apple crisp comes from the topping, which can be as basic as a mixture of flour, sugar, and butter, or it can be remarkably complicated. I like to use a slightly modified version of the very basic topping recipe. This crispy topping paired with the sweetly spiced filling make an incredible dessert.

Apple Crisp Recipes

Be sure to choose a firm apple for your apple crisp recipes. Red delicious apples may actually be both red and delicious, but they are too soft to be useful in baked desserts. Really firm apples like McIntosh, Macon, Granny Smith, or any other that your produce person recommends for baking will work well in this recipe.

Ingredients

For the Filling

  • 5 pounds McIntosh or Granny Smith apples
  • Grated zest of 1 orange
  • Grated zest of 1 lemon
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

For the Topping

  • 1 1/2 cups flour
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, firmly packed
  • 1/2 teaspoon kosher salt
  • 1 cup oatmeal
  • ½ cup of slivered almonds
  • 1/2 pound cold unsalted butter, diced

Instructions

  1. Preheat the oven to 350 degrees F. Butter a 9x14x2-inch baking dish.
  2. Peel, core, and cut the apples into large wedges.
  3. Combine the apples with the zests, juices, sugar, and spices.
  4. Pour into the dish.
  5. I like to use my hands to mix the topping but you can use your stand mixer if you like.
  6. In a bowl mix together the flour, sugar, brown sugar, salt, oatmeal, slivered almonds, and butter.
  7. Mix until the topping has the consistency of a soft dough.
  8. If you like, you can use your stand mixer. Place all of the topping ingredients into the bowl of your stand mixer and mix on low speed until the butter is the size of peas.
  9. Scatter the topping over the apples.
  10. Place the baking dish on a cookie sheet, to catch any juice that might bubble out, and bake for one hour.
  11. Serve warm with ice cream.
